She bakes!Soft chocolate sprinkle cookies

Hi there gang! I am so happy it is Saturday! Because it is time to share another delicious recipe and with Easter coming up these cookies will be a hit. Why? Well you can use a cute Easter cookie press for them, like a stamp. Oh yes. This recipe is one I have been trial and error all week. Why? Because it is a yummy hobby. And I wanted to make up a recipe that the kiddos can make with you and not be or feel left out.

Chocolate sprinkles cookies

So what do you need ?

3-4 oz of cream cheese room temp. I used 3oz cause that is all we had left. Hahah. But if the humidity is a brat you can add an extra ounce.

1cup unsalted butter. Paula dean it up ya’ll. room temp too. That will be 2 sticks .

1 cup sugar

1 eggy yolk.

1tsp vanilla

2 cups flour

1/4 cup cocoa powder. You can add more if you like. But 1/4 was enough.

Preheat le oven to 350 degrees and spray a pan with Pam baking spray OR best option parchment paper.

Mix in a bow the butter and cream cheese until light and fluffy. Then add the sugar. Beat on low or by hand if you forget you have a mixer or the wee child doesn’t like the noise. And when the butter and sugar is creamy and fluffy add the egg yolk. Then add vanilla. Mix again.

Now in a separate bowl. Mix the flower and cocoa powder together with a whisk . Add a small ammount of the butter mix to the flour at a time combining it all until all mixed. It should be aconsistency that you can form a ball with some of the batter. When it is like that stick the batter in the fridge for 30mins.

Take the batter out of the fridge and shape into balls. Using a cookie stamp or a bottom of a glass press each cookie flat. Then top with your fave spring or whatever time of year sprinkles.

Chocolate sprinkle cookies

Bake in a 350 degree oven for 8-10 mins. The cookies will be soft and seem underdone. You want it like that because they will dry out if baked longer.

      These are perfect for a sweet tooth. If you don’t like chocolate take out the cocoa powder and add more flour. 🙂
