But can she bake a cake?

YES! Yes I can! And so can you! It is easier than you think! And if a 17yr old on Great British Bake off (or what ever it is called) can do it, so can you my friends! You do not need a fancy pants stand mixer, I don’t have one. I have a handmixer. And that works just fine.(althought I would love a bright blinged out pink one)

Vanilla cake and cream cheese frosting

This cake is so simple my son and I made it in no time!

The ingredients

CAKE

2 cups flour

1stick unsalted butter softened plus more for pans

1tablespoon baking powder

1/2 tsp salt

1 1/2 cups sugar

3 large eggs room temp

1 cup milk

1tsp vanilla

FROSTING

1stick softened unsalted butter

4oz cream cheese room temp

5cups confectioners sugar AKA powder sugar

1/4tsp salt

1/4 cup half n half

1/2 tsp vanilla

preheat oven to 350 , butter the pans and flour them shaking out excess. OR use PAM baking spray.

Then whisk together in a bowl the flour,baking powder, and salt. Set aside. Next cream the butter and sugar in a separate bowl.  I used the handmixer on medium throughout.The butter and sugar will be fluffy, this is when you add the eggs one at a time. mix together on medium to low speed until the mix is thick and creamy.  Then add flour a bit at a time so you don’t have a mess.  Then add milk and vanilla.  mix until combined.  pour into the cake pans or sheet pan. I used a big sheet pan that was glass.

BAke for 30-35 mins or until cake is golden. If you stick a toothpick in and it comes out clean it is done. Take out and cool completely.

FROSTING ~~~~

Cream the butter and cream cheese together until light and fluffy. Add ONE CUP AT A TIME the powder sugar. until all mixed in, then add the cream and vanilla. Mix well! and VOILA! DONE!

You can then ice the cake and eat it. IF the cake is cool. There is a lot of frosting, store remaining in the fridge. YUM!
