There is nothing better than cookies at Christmas time, especially sugar cookies. There are so many memories of making sugar cookies with my mom at Christmas time. That it is something I want to share with my boys. But we always just did a basic sugar cookie, not this time!

This time we did a lemon sugar cookie. The lemon is subtle and so vibrant in flavor. And not just that we used salted sweet cream butter. It gives the cookie a richness.  A melt in your mouth texture.

What you need!

3 cups flour sifted

2 eggs

2 sticks of salted butter

1 cup sugar

1/2 tsp vanilla

10drops lemon oil or you can use lemon. Extract and lemon peel, be sure to use the peel too to cut the bitterness of the extract.

1tsp baking powder

Preheat oven to 350 degrees.

 

In a mixing bowl cream the butter and sugar. Add the eggs one at a time mixing completely.  Then add the vanilla and lemon. You want to add the flour one cup at a time sifting the flour as you add. Be sure to add the baking powder to one of the cups. Or sift all the flour and just add one cup at the time.

Once it gets to a bit of a crumbly and moist texture put the spoon aside dust your hands with flour and finish mixing with your hands.

Yes. That is right.

Then you can roll out and cut with what ever shapes you want! And bake for about 8 to 10 minutes.

Tips!

Make the cookies on the thicker side when rolling out! Then stick the cookies in the fridge before baking! This ensures an even bake and also they hold their shape better!

Use parchment when baking any cookies! Make some blue berry jam or use raspberry preserves to make window cookies! The flavors are so good together!
