Great fall meal. Drunken pasta.

Every now and then you run into something extraordinary on pinterest. This recipe for drunken pasta is just that. So much goodness on a plate and this meal will be great for colder weather!!

Makes a great second day meal like lasagna!

Ok. What you will need.
Olive oil
4 spicy Italian Sausage.  I have tried this recipe with turkey Italian Sausage and it is just a good.
1 large Onion quartered and sliced thin
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper.
1 1/2 tsp of salt.
1 tsp Italian seasoning
1/2 tsp black pepper
4 cloves of garlic pressed through garlic press. I just finely chopped.
1/2 cup of chardonnay
1 28 oz can of diced tomatoes
2 tablespoons of flat leaf parsley chopped
1/4 cup of julienned basil leaves split.
8 oz of pappadeli noodles.i use whatever I have. I have yet to find those.

Let’s cook.
In a large skillet heat up 2 tablespoons of olive oil in the pan on med high heat. Add the Italian Sausage and crumble but be sure to keep it chunky. The. Once brown remove with slotted spoon and the add onions. Once the onions are turning golden add the salt, pepper, and italian seasons.Then peppers and simmer until soft and golden brown. Now you can add the garlic and cook until fragrant.  Once it becomes aromatic add the 1/2 cup of wine and reduce by half. Next add the can of tomatoes with their juice and the Italian Sausage. Stir together and let simmer to combine flavors. This is when you will add 2-3 tablespoons of olive oil to give the dish a velvety finish. Add the parsley and half of the basil. Keep warm while you make the pasta.

When the pasta is done toss in with the sauce and serve topped with the remaining basil.
This dish is super easy and it is amazing!!
